Ok, maybe I should have called this blog "A Near-Vegan in Caldwell" because I'm not perfect at this.  I read in one of my recommended books (The Veganist I think) that leaning into a plant-centered diet is the way to make changes that will stick. The author also talks about shooting to be 85% plant-centered, maybe even 90% on a good week.  I can do that, in fact I do it all the time now...and I'm still working on improving the quality of that 85%.  Anyway, what I'm saying is that you will find some recipes posted on this blog that have an egg here and there or some other non-plant item.  I still think these recipes fit my criteria and it is definitely possible for someone to use a vegan substitute for the offending ingredients.  How about "An 85% Vegan in Caldwell"?
